INGREDIENT INTEGRITY
HEALTH STARTS WITH THE RIGHT INGREDIENTS
Delivering food for whole-person health starts with ingredient integrity. Knowing where each of our ingredients are sourced is the core of a wholesome, scratch-made meal. In every region where we work, we strive to source ingredients from local suppliers, farms, and small businesses. Our strong relationships with local and regional supply chains give us an advantage. We provide our clients with safe, fresh, high-quality food reliably when national and international supply chains are challenged.
When you combine genuine, scratch-made food with transparent, people-first business practices and innovative partnerships, you unlock the potential to improve the lives and livelihoods of people and communities across the country.
We are proud to work with The Common Market, a nonprofit regional food distributor on a mission to connect communities with good food from sustainable family farms building food security, farm viability, and community and ecological health. During the growing season, for example, you will see health-building fresh peas, collard greens, spinach, and blackberries from Common Market growers featured on our menus.
We choose to support minority and women-owned businesses whenever possible. Start-ups and food entrepreneurs can apply to our Good Food Does Good Microgrant Program to help grow their ability to produce artisan foods. When start-ups become established businesses, like the women-owned bakery Bread Gal, we turn to them to provide our clients with mouthwatering foods like hand-rolled, buttery brioche buns, cranberry raisin bread, and other specialty goods.
Local suppliers help us deliver meals that bring back memories. In New England, Runamok Maple, a family-owned and environmentally conscious producer of maple syrup, started with husband-and-wife team Eric and Laura Sorkin tapping the maple trees in their woods in Cambridge, Vermont. In the winter, our chefs apply warm maple syrup to freshly fallen snow to create maple taffy, a beloved Vermont tradition.
GENUINE INGREDIENTS
Sustainability, food safety, source transparency, animal protein awareness, diversity & inclusion, and zero waste—they are inseparable components of our ingredients, and they all share equally at the table that is the Genuine Foods.
